The Culinary Program has over 120 students and is one of the largest culinary programs on the Big Island of Hawaii.
The Culinary Classes have worked to put together a variety of social media channels to provide the commmunity an avenue to see what we are doing with the culinary arts classes.

Tangible Learning Through Real Life Partnerships
The labs I’ve done in
both the PHS classes and Culinary classes have prepared for a job in the
foodservice industry and taught me how businesses are run; in the past two
years, I’ve learned how to organize like a chef, how to plan ahead, and of
course, how to cook things. Most of the things we made had the food truck in
mind, so we learned about product development, food costing, food preparation
and shelf life, and advertising in order to apply it to the food truck and to
real life.
I was even able to volunteer
at Pono Grindz for a day, and I noticed that every single thing we’d learned in
class was connected to it. Not only the recipes, but the organization, food
preparation, planning ahead, food costing, product development, and everything
else. And I learned more about running businesses by volunteering to work in the
food truck.

Culinary Program Partnering with Pono Grindz Food Truck
For my testimony I helped the Pono Grindz food truck at Kua Bay. I experienced what
it is like working in a food truck and for the most part its fun. We got to make tacos,
hot dog, poke bowls, wraps, shave ice, and many more delicious foods. We have
learned many things in Food Service, including marketing, creating surveys, and food service
standards. During class time, we have often explored different food products to create
for Pono Grindz. We test market the items during our wiki after knowing our food costs and collect surveys from students as the test market.

Learning About Sanitation and Food Safety
One of the many things i've learned in culinary arts class is safety and sanitation. Whenever
we enter the kitchen we have to wear closed toed shoes, have our hair tied back and wash
our hands. We learn how to properly use the knife to reduce the risk of injuring myself or
others. Also, when I am moving a hot pot or pan we yell “ hot pan/pot” just to give the heads
up to other people that are around us. When we are done using the kitchen we bleach rag
down the countertops and sinks. We have to be careful about our food that we prepare.
These skills have a lot of meaning especially when we apply it to real settings. When I
worked on the food truck, I had to use all these safety and sanitation standards. We use
chicken in some of our recipes and we know that we can’t use the same cutting board or
knife because if we use the same board for everything we can get salmonella. If we don’t
take the responsibility or being careful, people could get sick and the business can shut
down. This can relate to reality/ real life because once we get to our own kitchen or if we
work in a restaurant, it won't be as hard for us because we already learned being
safe and sanitized in culinary arts class. I feel that I’m better prepared to work at a job

Marketing As Part of the Pono Gridz Experience
I think the most important thing we learned was Marketing. Marketing is a big part of any
business. I liked the project on Pono Grindz because it really helped us get an
understanding of how to market your own business. In the classroom we often develop
products that we specifically feel might sell well at Kua Bay. After we create the product, we
test the market on campus, selling and taking surveys during wiki. After determining which
of all the test products we created has the best response, we then produce this for pono
grindz to sell and help raise some funds for our program. I enjoyed learning about
marketing so much that I am considering doing it for a living. I also enjoyed having Julie
come in and teach us social media marketing, as well. With her help we got a valuable understanding of how to use marketing and create social media content. .

Chef Fish
Chef Fish, owner of Cool Runnings food truck came to show us how to make some Jamaican food. We made bacon wrapped short ribs, rice, and plantains. It was delicious!

Welcome to the 2017 "Healthy Living Eating Pono (HELP)" a project created by
Ms. Sheff from Kealakehe High School. This program is a cross collaboration Project which involves all departments of the Career Technical Education (CTE) program called "Healthy Living Eating Pono (HELP)".
The HELP project was created to develop partnerships with public and private industries, providing opportunities for students interested in tangible learning and professional standards in various industries. Students research and develop real life skills and academic learning to become career and college ready. Pono Grindz food truck at Kua Bay is headed by Chef Mike, a part time teacher with Kealakehe Culinary program, and works in partnership with Kealakehe High School Culinary students. CTE students on campus collaborate developing healthy food specials for Pono Grindz, analyze sales trends, food costs, and continously are involved in product development. CTE students on campus are also working on the HELP food van to go into the community to teach about healthier living and eating. The HELP project's intention is to ultimately allow Kealakehe students to become the ambassadors for healthy changes in West Hawaii. We have created a bold vision for the future of our culinary students and the community.
